I have a terrible habit of blending past events with each other.
Me: “Remember that sticky date pudding we had when we last caught up for lunch?”
You: “You mean my birthday dinner …?”
However, I can still remember clearly when I was a kid the first time I ever had cappuccino cake, that my Mum made one Christmas Day. So began a life long obsession with coffee and cake. Cake was fairly easy to kick – out of sight, out of mind. But coffee is forever.
Still the memory of that cake lingers.
It is probably clear by now that having something which resembles dessert for breakfast is a method of taming my sweet tooth.
First is was Lemon-Shortbread, more recently Carrot Cake and now I present:
Coffee & Walnut ‘Cake’
A shot of freshly brewed coffee*
1/3 cup of chickpeas
1/4 cup of cottage cheese
1/4 cup of rolled oats
2 tablespoons of milk
1 tablespoon of protein powder, I used vanilla
1 tablespoon of maple syrup/honey
1 teaspoon of cinnamon
A pinch of nutmeg
A small handful of crushed walnuts
